Ingredients:
1 lb. of chorizo
1 white onion, diced
1 bell pepper, diced
1 jalapeño pepper, diced
1 lime, cut into wedges
1 bunch of cilantro, chopped
12 corn tortillas
Salt and pepper to taste
Instructions:
Preheat your outdoor griddle to medium-high heat. If your griddle has a temperature gauge, aim for a temperature between 350°F and 400°F.
While the griddle is heating up, prepare the chorizo by removing it from its casing and breaking it into small pieces.
Once the griddle is hot, add the chorizo to the griddle and cook for about 5-7 minutes, stirring occasionally. Chorizo is a fatty meat, so it will produce a lot of oil. Use a paper towel to soak up the excess oil periodically.
