Saturday Pancakes On Your Griddle

Homemade Pancake Recipe:

  • 2 cups all-purpose flour

  • 2 tablespoons sugar

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 2 cups milk

  • 2 large eggs

  • 1/4 cup unsalted butter, melted

  • 1 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  2. In another bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined (it's okay if there are some lumps in the batter).

  4. Preheat your outdoor griddle over medium-high heat and brush it with a little vegetable oil to prevent sticking.

  5. Once the griddle is hot, pour about 1/4 cup of batter onto the griddle for each pancake, spacing them out a few inches apart.

  6. Cook the pancakes for 2-3 minutes on the first side, or until bubbles start to form on the surface and the edges start to dry out.

  7. Flip the pancakes and cook for an additional 1-2 minutes on the other side, or until golden brown.

  8. Repeat with the remaining batter, brushing the griddle with a little more oil as needed.

And there you have it - a delicious homemade pancake recipe and instructions for cooking them on an outdoor griddle. Don't forget the maple syrup and butter!

Note about surface temperature of your griddle:

When cooking pancakes on an outdoor griddle, the perfect surface temperature is around 375-400°F (190-204°C).

To achieve this temperature, preheat the griddle over medium-high heat for a few minutes before adding any batter. A drop of water on the surface should sizzle and evaporate immediately when it's hot enough.

Keep in mind that outdoor griddles can be affected by weather conditions, such as wind and temperature, so you may need to adjust the heat source slightly during cooking to maintain the desired temperature. Also, if you're using a propane griddle, the heat may fluctuate as the propane tank empties, so be sure to keep an eye on the temperature throughout the cooking process.
